Reishi Ramen
The perfect winter warmer, this Reishi Ramen recipe combines nutrient-dense vegetables and spices with the potent immune-supporting properties of medicinal mushrooms.

This flavoursome mushroom & miso broth features shiitake, traditionally used in ramen recipes, and is boosted by the incredible Reishi Extract. Within Traditional Chinese Medicine, reishi is known as the “mushroom of immortality”, due to its anti-inflammatory, antioxidant and immune-supportive actions. Alongside promoting longevity, reishi is also wonderful for encouraging a sense of calm, reducing stress and supporting
nourishing sleep - making it the perfect addition to this evening meal.
Ingredients: (Serves 4)
2 tbsp toasted sesame oil
4 cloves garlic, crushed
1 thumb-sized knob of ginger, grated
2L water, or vegetable stock
1⁄4 cup shiro miso paste
2-3 tbsp tamari
1⁄2 tbsp rice wine vinegar
A generous serve of @brightvalleymushrooms Reishi Extract
8 shiitake mushrooms
400g firm tofu, diced or cut into lengths
2 bunches of bok choy, sliced lengthways
3 carrots, spiralised
2 radishes, cut finely
1 packet of ramen noodles
Sesame seeds to garnish
Drizzle of chilli oil, optional
Method:
1. Add sesame oil, grated ginger & crushed garlic to a large pot, gently warm on a
medium heat until fragrant.
Add water/stock, miso paste, tamari, rice wine vinegar & shiitake mushrooms, and
bring to a boil. Once boiling, reduce to a medium heat & allow to simmer for at least
30 minutes.
Slice tofu, bokchoy, radishes and carrots, arrange in a serving bowl as desired.
Once broth has been simmering for at least 30 minutes, add noodles & cook until
soft.
Add noodles and desired amount of broth to the serving bowls, and add a dropper of
@brightvalleymushrooms Reishi Extract.
Sprinkle with sesame seeds and chilli oil as desired, and enjoy hot!
