Miso Tahini Nourish Bowl + Lion’s Mane

Include the powerful Lion’s Mane in your day in a variety of ways! In this recipe, you’ll find lion’s mane tincture infused into a miso & tahini dressing, spread over a plant-packed nourish bowl. Versatile to your favourite veggies or proteins, but made delicious with creamy & fresh flavours.

Harness the benefits of Lion’s Mane, in a fun & fresh nutritional format. Considered a powerful nootropic, Lion’s Mane supports brain health and function. In particular, this mushroom has been shown to promote the growth of neurons, support memory, recall & learning abilities, and may even improve low moods.

Ingredients: (Serves 2)

For the dressing:

  • 1/2 cup tahini

  • 1-2 dropperfuls of @brightvalleymushrooms Lion's Mane extract

  • 1 tbsp tamari

  • 1 heaped tbsp shiro (white) miso paste

  • 1⁄4 cup maple syrup

  • Boiling water as needed


For the dish:

  • 1 cup of red rice

  • A selection of your preferred vegetables, I’ve used capsicum, red cabbage, carrot,

    cucumber, tomato, steamed broccoli, baby spinach & radish - but you can use

    whichever vegetables you feel called to.

  • A handful of pepitas & sesame seeds to sprinkle on top.


Method:

  1. Add rice to a rice cooker, and prepare vegetables as needed.

  2. Add @brightvalleymushrooms Lion's Mane extract, tahini, tamari, miso paste &

    maple syrup to a clean glass jar. Add hot water as needed to help soften the miso paste & tahini - add more water for a thinner consistency. Replace the lid on the jar, and shake vigorously to blend.

  3. Place rice in the centre of each bowl, and arrange vegetables around. Generously drizzle miso + tahini dressing over each bowl. Sprinkle with seeds to finish.

  4. Serve & enjoy!
