Peanut Butter Noodles with Lion’s Mane

These Peanut Butter Noodles with Bright Valley Mushrooms Lion’s Mane extract is just the thing! This recipe is perfect for meal prep - just pop it all in a jar for a ready-to-go lunch. You can also swap the veggies to suit what you have at home, & add tofu or tempeh for an extra protein hit.

Ingredients:

  • 1⁄2 cup smooth peanut butter

  • 2 tbsps soy sauce (or coconut aminos if GF)

  • 1 dropperful of Lion’s Mane Extract

  • 1 tbsp maple syrup

  • 1/2 chilli, diced (optional)

  • 2 tbsps lime juice

  • 1⁄4 cup water

  • 1⁄2 cup shredded red cabbage

  • 1 small carrot

  • 1⁄2 cucumber

  • 1 serve of soba noodles


Method:

  1. Finely chop vegetables, & set aside.

  2. In a small bowl, add peanut butter, soy sauce, lions mane extract, maple syrup, chilli, lime juice & water

    and mix well to combine (or you can add ingredients to a jar & shake it!).

  3. Cook noodles as per packet instructions. Run under cool water & drain thoroughly.

  4. Place noodles & veggies in a bowl, & top with plenty of sauce. Enjoy!
