Ginger Christmas Cookies (w Reishi)

If you’re looking for a fun, quick & easy recipe to share with your loved ones this silly season, look no further than my Ginger Christmas Cookies. It’s the perfect recipe to make with the kids too!
Ingredients:
2 1⁄4 cups plain wholemeal flour
1 cup coconut sugar
2-3 dropperfuls of @brightvalleymushrooms Reishi Extract
4 tbsps soy milk
1 tbsp maple syrup
3⁄4 cup vegan butter
1 tsp baking powder
1 tsp cinnamon
1 tbsp ground ginger
1 tsp nutmeg
Method:
Preheat oven to 180C, & line 2 baking trays.
Add the butter, sugar, milk, maple syrup & @brightvalleymushrooms Reishi Extract to a bowl & mix well.
Add the flour, baking powder, cinnamon, ginger & nutmeg, and mix until just combined. Add more milk or flour as needed.
Sprinkle a little flour over a board, & shape dough into discs. Use a cookie cutter to prepare cookies, & place onto the baking tray.
Bake for 10-15mins, until lightly golden brown. Allow to cool for 5 mins, & enjoy!
