Is there anything that screams Christmas more than gingerbread?

If you’re looking for a fun, quick & easy recipe to share with your loved ones this silly season, look no further than my Ginger Christmas Cookies. It’s the perfect recipe to make with the kids too!

And a cheeky little bonus tip? Add a few drops of Bright Valley Mushrooms Reishi Extract to the mix, to support a sense of calm amidst the Christmas chaos!

Ingredients:

  • 2 1⁄4 cups plain wholemeal flour

  • 1 cup coconut sugar

  • 2-3 dropperfuls of @brightvalleymushrooms Reishi Extract

  • 4 tbsps soy milk

  • 1 tbsp maple syrup

  • 3⁄4 cup vegan butter

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • 1 tbsp ground ginger

  • 1 tsp nutmeg


Method:

  1. Preheat oven to 180C, & line 2 baking trays.

  2. Add the butter, sugar, milk, maple syrup & @brightvalleymushrooms Reishi Extract to a bowl & mix well.

  3. Add the flour, baking powder, cinnamon, ginger & nutmeg, and mix until just combined. Add more milk or flour as needed.

  4. Sprinkle a little flour over a board, & shape dough into discs. Use a cookie cutter to prepare cookies, & place onto the baking tray.

  5. Bake for 10-15mins, until lightly golden brown. Allow to cool for 5 mins, & enjoy!
