Super quick, easy & versatile, these coconut & cordyceps breakfast bars are the perfect bite for when you’re on-the-go! Supercharged with natural energy, from the medicinal properties of dehydrated cordyceps mushrooms, to a variety of plant-based grains, seeds & nut products - you’ll be fuelled in the most nourishing way!

This recipe incorporates our dehydrated cordyceps: which supports balanced energy levels & reduce fatigue. Cordyceps is also widely utilised for its ability to support athletic performance, by boosting stamina & endurance - so these make a great pre-workout snack too!

Ingredients: (Makes 9 Large Bars)

  • 2 cups of oats

  • 2 tsp @brightvalleymushrooms dried cordyceps

  • 1 tbsp almond flour

  • 2 tbsp flaxseeds

  • 2 tbsp chia seeds

  • 1 cup of shredded coconut

  • 1/3 cup maple syrup

  • 1/2 cup nut butter

  • 1/2 cup of plant milk

  • Optional: handful of choc chips, or cinnamon


Method:

  1. Add @brightvalleymushrooms dried cordyceps & flaxseeds to a spice grinder & blitz until it forms a fine powder.

  2. Add cordyceps & flaxseed mix, plus all dry ingredients to a medium bowl & combine.

  3. Add wet ingredients to bowl & combine all together until it forms a sticky dough.

  4. Grease a rectangular baking tray, add dough to tray & press flat.

  5. Bake at 180C until golden on top (approx. 15-20 minutes).

  6. Remove from oven & allow to cool for 10 minutes.

  7. Cut into generous-sized bars & enjoy!
