Buckwheat Pancakes infused with Reishi
Is there anything better than pancakes? Well, if you answered “medicinal mushroom-infused pancakes”, you’d be 100% correct! 🥞
Ingredients:
1.5 cups buckwheat flour
¼ tsp baking soda
1 tsp baking powder
2-3 dropperfuls of @brightvalleymushrooms Reishi Extract
1.5 cups plant milk
2 tsp apple cider vinegar
2 tablespoons coconut sugar
1 tsp vanilla essence
1 tbsp avocado oil (or EVOO)
Method:
In a large mixing bowl, stir together all the dry ingredients: buckwheat flour, baking soda, baking powder. Make a well in the centre & pour the remaining ingredients in the middle. Add 2-3 dropperfuls of @brightvalleymushrooms Reishi Extract.
Whisk until it forms a slightly thick batter with no lumps.
Warm a frypan under medium heat with a little avocado or olive oil.
Pour 1/4 cup of batter onto the warm pan, use the back of a spoon if needed to spread batter into a round shape.
Cook until bubbles form on top and sides are firm, then slide a spatula under & flip. Cook for an extra 30 secs on this side.
Allow to cool on a rack while you are cooking the rest of the batter. You should be able to make 8-10 pancakes.
Serve with toppings of your choice like fresh berries, banana, maple syrup or almond butter. Enjoy!
