Buckwheat Pancakes infused with Reishi

Is there anything better than pancakes? Well, if you answered “medicinal mushroom-infused pancakes”, you’d be 100% correct! 🥞

The perfect pancake recipe for a Sunday morning, best enjoyed topped with fresh fruit, nut butter or maple syrup. For an added boost, you can infuse the pancake batter with your tincture of choice - in this case, we’ve gone with Reishi!

Perfect for those relaxed Sunday vibes, Reishi is revered within Traditional Chinese Medicine for its ability to promote a sense of calm within the body & mind.

Ingredients:

  • 1.5 cups buckwheat flour

  • ¼ tsp baking soda

  • 1 tsp baking powder

  • 2-3 dropperfuls of @brightvalleymushrooms Reishi Extract

  • 1.5 cups plant milk

  • 2 tsp apple cider vinegar

  • 2 tablespoons coconut sugar

  • 1 tsp vanilla essence

  • 1 tbsp avocado oil (or EVOO)


Method:

  1. In a large mixing bowl, stir together all the dry ingredients: buckwheat flour, baking soda, baking powder. Make a well in the centre & pour the remaining ingredients in the middle. Add 2-3 dropperfuls of @brightvalleymushrooms Reishi Extract.

  2. Whisk until it forms a slightly thick batter with no lumps.

  3. Warm a frypan under medium heat with a little avocado or olive oil.

  4. Pour 1/4 cup of batter onto the warm pan, use the back of a spoon if needed to spread batter into a round shape.

  5. Cook until bubbles form on top and sides are firm, then slide a spatula under & flip. Cook for an extra 30 secs on this side.

  6. Allow to cool on a rack while you are cooking the rest of the batter. You should be able to make 8-10 pancakes.

  7. Serve with toppings of your choice like fresh berries, banana, maple syrup or almond butter. Enjoy!
