Chocolate Date Bark - With Lion's Mane
This super simple, 5-ingredient dark chocolate date bark is the perfect brain-boosting snack! The infusion of the natural brain-loving boost of Lion’s Mane mushrooms with theobromine (found in cacao) combines for a mood-boosting power couple. This delicious plant-based recipe is sure to put a smile on your face!
Ingredients:
2 blocks of your fave dark chocolate
5 servings (25ml) of Lion’s Mane Tincture
12-16 Medjool dates (pitted)
1⁄2 cup peanut butter
1⁄2 cup pecans
Salt flakes to serve (optional)
Method:
Crush pecans in a mortar & pestle, or roughly chop & set aside.
Line a tray with baking paper.
Slice dates in half lengthways & cover most of the baking paper, overlapping dates slightly.
Place another sheet of baking paper over the top of the dates. Using the base of a glass, press down on dates firmly to flatten.
In a small saucepan, break the chocolate blocks into small pieces & place on medium heat on the stove, stirring frequently.
Remove baking paper from dates. Spread enough peanut butter over the dates to cover.
Sprinkle crushed pecans over the peanut butter, leaving a small amount for garnishing.
Once the chocolate has melted completely, remove from the stove & stir in the Lion’s Mane Tincture until combined throughout. Then, pour your infused melted chocolate over the peanut butter, pecan & dates. Use the back of a spoon to smooth over.
Sprinkle salt flakes & the remaining crushed pecans over chocolate, & pop to the freezer for 15-20mins.
Once cooled completely, remove from the freezer & cut or snap into bite-sized pieces. Enjoy!
